WW2 Carrot Cookies


These were super easy and quick to make and bake.

Oven Temperature: 200 deg C

Preparation Time: 10 minutes

Cooking Time: 10 minutes in my fan assisted oven*

Makes: 6*

Ingredients:

1 tbsp margarine*

1 tbsp caster sugar

1 tsp vanilla essence

4 tbsp grated raw carrot

6 tbsp self-raising flour

1 tsp cinnamon

1 tbsp water

  • Turn on the oven. Lightly grease a baking tray.

  • Cream margarine and caster sugar until light and fluffy.

  • Add the vanilla extract and carrot, stir again.

  • Mix in the flour and cinnamon.

  • Loosen the mixture with the water.

  • Drop spoonfuls on to a baking tray. We made approximately 9 cookies using a 1/2tbsp for each cookie.

  • Bake in the oven.

  • Cool on a wire rack


*Notes:

Although they tasted nice they were slightly over baked. In future I would recommend taking them out sooner or making fewer larger cookies.


Actual margarine is not commonly available, on this occasion we used butter.
