WW2 Carrot Cookies
These were super easy and quick to make and bake.
Oven Temperature: 200 deg C
Preparation Time: 10 minutes
Cooking Time: 10 minutes in my fan assisted oven*
Makes: 6*
Ingredients:
1 tbsp margarine*
1 tbsp caster sugar
1 tsp vanilla essence
4 tbsp grated raw carrot
6 tbsp self-raising flour
1 tsp cinnamon
1 tbsp water
Turn on the oven. Lightly grease a baking tray.
Cream margarine and caster sugar until light and fluffy.
Add the vanilla extract and carrot, stir again.
Mix in the flour and cinnamon.
Loosen the mixture with the water.
Drop spoonfuls on to a baking tray. We made approximately 9 cookies using a 1/2tbsp for each cookie.
Bake in the oven.
Cool on a wire rack
*Notes:
Although they tasted nice they were slightly over baked. In future I would recommend taking them out sooner or making fewer larger cookies.
Actual margarine is not commonly available, on this occasion we used butter.
