Grandma's Marble Magic
A combination of chocolate and mint in a surprisingly light sponge.
Oven Temperature: 375 deg F, 190 deg C (Mark 5)
Preparation Time: 20 minutes
Cooking Time: 30-40 minutes in my fan assisted oven
Ingredients:
4 oz margarine*
6 oz caster sugar
2 standard eggs
5 1/2 oz self-raising flour, sifted
5 or 6 tablespoons milk*
1/2 teaspoon peppermint essence*
few drops of green food colouring*
1 level tablespoon coco powder
1 level teaspoon icing sugar
Turn on the oven to a moderate heat. Grease and line a 6 in. round cake tin with greaseproof paper.
Cream margarine and caster sugar until light and fluffy.
Beat in the eggs gradually then fold in sifted flour before stirring in the milk.
Spoon half mixture into another bowl. To one bowl add the peppermint and green food colouring, to the other bowl add the coco powder.
Put alternate spoonfuls into the cake tin and then gently swirl the two mixtures together being careful not to over combine the colours.
Bake in the oven.
Cool on a wire rack and dust with sifted icing sugar before serving.
*Notes:
The first problem I encountered was the inability to buy actual margarine so I opted for a Stork spread specifically for cakes.
I mention in the video that I added an extra tablespoon of milk. After some discussion with my mum about the size of cooking spoons I have decided that whilst my standard tablespoon is 15ml, my Nan's was 20ml and after making a few vintage recipes have found that more works better then less so will often add a bit extra.
I used Dr. Oetker American Peppermint and my husband said it made the cake taste like a Mint Aero. On the other hand my youngest daughter said it tasted like toothpaste.
A mum from school recommended trying Food Colour Gels for more vibrant colours so I opted for 1/2 teaspoon Dr. Oetker Green Colour Gel which did provide a lovely shade of green.
